Aloo Matar

Aloo Matar is a comforting homestyle curry made with tender potatoes and sweet green peas simmered in warm spices. With Spice Symphony’s All-Purpose Base Sauce and Garam Masala, this version keeps preparation simple while preserving the familiar flavors of a classic everyday dish.

Ingredients

  • (Optional) 1 green chili, finely chopped
  • ½ inch fresh ginger, finely chopped
  • 2 tbsp oil (or 1 tbsp oil + 1 tbsp ghee)
  • ¼ tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 medium potatoes, peeled and cubed (about 2 cups)
  • ½ tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp ground coriander
  • ½ tsp red chili powder
  • Salt, to taste
  • 1 cup green peas (fresh or frozen)
  • ¾ cup Spice Symphony All-Purpose Base Sauce (use more for extra curry)
  • 1–1½ cups water
  • 1 tbsp chopped cilantro (plus more for garnish)
  • 1 tbsp crushed fenugreek (kasuri methi)
  • ½ tsp Spice Symphony Garam Masala

Method

  1. Prepare the aromatics: Crush the green chili and ginger together using a mortar and pestle. Set aside. (Alternatively, finely chop both and add directly to the oil in the next step.)
  2. Temper the spices: Heat oil in a pan over medium heat. Add mustard seeds and allow them to splutter. Add cumin seeds and let them bloom briefly.
  3. Build the base: Add the crushed ginger-chili mixture to the pan and sauté for about 1 minute, until fragrant.
  4. Cook the potatoes: Add cubed potatoes, turmeric, cumin powder, ground coriander, red chili powder, and salt. Cook until the potatoes are about half cooked, stirring occasionally.
  5. Add the sauce: Stir in the Spice Symphony Base Sauce and add ½ cup water. Mix well.
  6. Simmer and adjust: Bring to a boil, then reduce to a simmer. Cover and cook for 8–10 minutes, adding more water as needed. The curry should have a gentle flow — not dry, not watery.
  7. Finish the curry: Add green peas and chopped cilantro. Simmer for 3–5 minutes, adjusting salt and spices to taste.
  8. Garnish and serve: Finish with crushed fenugreek, Garam Masala, and additional cilantro. Serve hot with rice, roti, or bread.
